It's been super hectic so only one post this week however here's a super comfy one, Japanese curry; enjoy! **Ingredients** - 16 oz of baked or fried tofu (or any protein) - 1lb of potato's cut into bite size cubes - 2 carrots chopped - 2 stalks of celery chopped - 1 Onion diced - 8 oz King Oyster mushrooms chopped - 4 cups veggie stock - 1 tablespoon soy sauce - 1 tablespoon neutral oil - 4-6 cubes of s&b curry roux Serve with rice **Instructions** - Add oil to a large pan and sauté the mushrooms until lightly browned; set aside. - Using the same pan, add more cooking oil and sauté onions until they caramelize.  - In a medium pot, add the sautéed mushrooms, sautéed onions, potatoes, protein, carrots, celery, veggie stock, and soy sauce. Bring to a boil, then reduce the heat and simmer with a cover. Cook for 30 minutes or until the veggies are to your desired tenderness. - Using a sieve, stir the curry roux into the broth. The broth will slowly turn darker. Test and season with more soy sauce if needed. Serve with rice and enjoy!!

Anywho this months final recipe is Arayes, enjoy! **Ingredients** - 1lb impossible *eff or other protein - 1 Onion, grated (squeeze to remove excess moisture) - 2 cloves garlic minced - 1 1/4 tsp salt - Olive oil as needed - Pita bread **Spice mix** - 1/2 cup chopped parsley - 1/2 tsp cumin - 1/2 tsp coriander - 1 tsp paprika - 1 tsp black pepper - 1 tbsp seven spice (baharat) **Instructions** - In a large bowl, add 1 lb of protein, 1 onion, garlic, and the spice mix, salt; mix well. - Divide the protein mix into 10 portions. - Microwave the pita bread till warm, then cut in half. - Stuff half a pita with 1 portion of the protein mix and flatten by pressing down and out to spread the mix evenly. - Heat a large pan on medium-high. Add a small amount of olive oil to coat the pan, then add as many stuffed pita half's as you can fit in the pan. - Pan fry for 4 min (2 min on each side) when golden brown and protein is cooked through, its done! (optional, serve with tahini sauce, pickled veggies and a side salad.) If you cant find tahini sauce at your local shop try this: Mix 1 cup plain yogurt, 2tbsp tahini, 1tbsp lemon juice, 1 finely grated garlic clove, 1/2tsp salt. Mix well and enjoy!

  • Hi! This week's recipe is chili; as usual, any feedback is welcome. Enjoy! **Ingredients** - 1 medium onion, chopped - 1 teaspoon ground cumin - 2 stalks celery, chopped - 2 green bell peppers, chopped - 2 jalapeno peppers, chopped - 3 cloves garlic, chopped - 2 (4 ounce) cans chopped green chile peppers, drained - 2 packages impossible *eef (24oz of protein) - 3 cans whole peeled tomatoes, crushed (28 ounces total) - ¼ cup chili powder - 1 can kidney beans, drained - 1 can garbanzo beans, drained - 1 can black beans - 1 can whole kernel corn - (optional) 1 Whole avocado and 1 handful of chopped cilantro **Instructions** - Heat a Dutch oven on medium heat, add oil, and cook the impossible *eef until the protein is caramelized. - Add onion Cook and stir until onion is translucent; stir in celery, green bell peppers, jalapeños, garlic, cumin, and chili powder; cook till fragrant. - Add green chili peppers, tomatoes, and chili powder. Stir in kidney beans, garbanzo beans, and black beans; season with black pepper and salt to taste. Then bring to a boil, reduce heat to low, and simmer for 50 minutes. - Add corn and cook for an additional 5-10min - Finish with avocado and cilantro (optional). Serve with cornbread, tortilla chips, rice etc (optional). All done, enjoy!

Enjoy! **Ingredients** - 1 block of firm tofu - 1/4 teaspoon ground turmeric - 1/2 teaspoon garlic powder - 1/2 teaspoon onion powder - 1/4 teaspoon paprika - (optional) chili flakes to taste - 1/2 teaspoon kala namak - 1 tablespoon tahini - 2 tablespoons nutritional yeast - 1/2 cup creamy plant milk - salt and pepper to taste **Instructions** - Wrap the tofu in a towel and put a heavy pan on top with some kind of weight to press the remaining moisture out of the tofu. Leave for at least 20 minutes. - Combine the turmeric, paprika, chipotle, onion, garlic, kala namak, black pepper, tahini, and nutritional yeast in a bowl. Gradually add the milk and whisk until a smooth sauce forms. - Heat a large pan over medium-high heat and add oil. Once the oil is hot, crumble the tofu and add it to the pan and fry until it’s lightly browned. - Add the sauce to the tofu and mix, coating the tofu in the sauce. Reduce until you reach your desired consistency. - Season with salt and pepper to taste, serve with tortillas or bread and enjoy! !

    This weeks first recipe is Spaghetti with *eat sauce. Thanks to [@Angel@hexbear.net](https://hexbear.net/u/Angel) for the inspiration in u/foods, enjoy! **Ingredients for sauce** - 1 14oz can of tomato sauce - 1 whole onion (diced) - 4 cloves of garlic (fine dice) - 4 links vegan Italian Sausage (removed from casing) - Sugar to taste - Salt to taste - Box of pasta (I <3 macaroni) - Vegan parmesan to taste - 1tbsp of olive oil **Instructions** - Heat a sauté pan on medium-high heat and add olive oil. - Add onions and sauté until translucent. - Add sausage and garlic, break into small pieces, cook till golden brown. - Add tomato sauce and scrape off the bits at the bottom of the pan. - Season to taste with salt, add enough sugar to counteract the acidity (to your liking), and simmer on medium-low heat for 40 minutes. - Cook pasta to your liking in a seprate pot, when done strain pasta. - Combine pasta with sauce; add parmesan. This weeks second recipe is a Japanese take on mapo tofu, enjoy! **Ingredients for sauce** - 2½ Tbsp. doubanjiang  (this is a must have) - 1 Tbsp. miso - ½ Tbsp soy sauce - 2 Tbsp. mirin - 1 tsp toasted sesame oil - 1 tsp. potato starch or cornstarch - 4 Tbsp. water **Ingredients for sauté** - 2 cloves garlic (minced) - 1 Tbsp ginger (minced) - 2 green onions/scallions (chopped to your liking) - 14 oz. soft/silken tofu - 1 Tbsp neutral oil - ½ lb protein (impossible ground *eef or Seitan fine diced so it resembles crumbles) **Instructions** - Combine all ingredients for the sauce in a small bowl and mix (set aside). - Heat a wok or large frying pan on medium heat, then add oil. - Add the 1/2lb of protein, garlic, and ginger to the wok and stir fry till golden brown. - Turn heat to medium-low, add the sauce, break apart the silken tofu into bite-sized pieces, and add to the wok. - Gently stir the tofu, coating it in the sauce mixture, then simmer till heated through. - Add green onions and serve with rice.

    Hey there, I was wondering if there is any interest in some kind of recipe posting (at least biweekly) where the main purpose would be to show people how to make affordable, filling, yummy, and super easy to make meals. Maybe the requirements could be less than 10 minutes of prep, 1 hour of cooking time and under $3ish a serving? Example: **Lentil Soup** **Ingredients:** - 2 tablespoons olive oil - 1 cup finely chopped onion - 1/2 cup finely chopped carrot - 1/2 cup finely chopped celery - 2 teaspoons kosher salt - 1 pound lentils - 1 8oz can of diced tomato's - 2 quarts vegetable broth - 1/2 teaspoon freshly ground coriander - 1/2 teaspoon freshly ground toasted cumin - 1/2 teaspoon freshly ground grains of paradise **Directions:** - Place the olive oil into a large 6-quart Dutch oven and set over medium heat. - Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6 to 7 minutes. - Add the lentils, tomatoes, broth, coriander, cumin and grains of paradise and stir to combine. Increase the heat to high and bring just to a boil. - Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes. - All Done!

    Xiaomi 13 and MIUI

    The good: The build quality outperformed any previous iPhone or Pixel I've used. Super fast charging, It took less than 15 minutes to reach nearly full charge. Also everything I used ran quite quickly, including the OS.

    The bad: It was nearly difficult to properly receive notifications due to MIUI's battery management. There were no basic aesthetic modification options available; I got the impression that Xiaomi was pressuring me to purchase themes.

    The meh: The language barrier was somewhat inconvenient when the keyboard would automatically switch to pinyin, could chalk this up to the pre install rom and my own skill issue of not being able to read hànyǔ or zhōngwén.

    How do I get one outside of china? I have seen these on AliExpress, but I'm not sure whether I can help with this one as I acquired it from a close friend.
